Courgette, cauliflower and goat cheese tart

Ingredients:

  1. Ready rolled puff pastry
  2. 1 courgette, 1 half cauliflower, 1 or 2 onions, mushrooms, tomatoes and/or any other vegetables you like
  3. tub of green pesto
  4. Goat cheese

Method:

  1. Unfold a ready rolled puff pastry unto an oven tray
  2. Cut all the vegetables in small pieces
  3. Spread the pesto on the pastry.
  4. Add all the vegetables and goat cheese.
  5. Add any spices / herbs and black pepper. Don't add much salt as the pesto and goat cheese will be salted.
  6. Cook in the oven for 30 to 40 mins at 200 degrees celsius.
  7. Serve with a side salad.
